Kashkaval is a semi-hard, yellow cheese, made essentially from cow's milk, while a variation is made from sheep's milk or  a combination of both. It can be consumed aged or fresh. While the aged one is more like a delicacy at breakfast, the fresh variety can be used in cooking, baking and in a grilled cheese sandwich for a quick lunch or snack.
